This is a two part question.
Part one: Would Urahara force Aizen to use bankai?

Part one: yes
Part two: depends on what their Bankai are.
If you want to know who would win just based on what has been shown so far, then you can get a reasonable answer. Mine would be Aizen. However without knowing what their Bankai can do we have no real base to speculate.
It has been shown that KT has a habit of matching up people who have just the right ability to take on the opponent in front of them, where other people would fail. So should Aizen and Urahara fight, even if Aizen is owning everyone else in front of him, Urahara might have that one trick up his sleeve that negates Aizen and makes him vulnerable.
Right now its too early to say.

Well Urahara would be ideally suited to fight Aizen, he's pretty damn cunning and his blood mist sheild would help prevent attacks from a camoflaged Aizen (that is if Urahara's seen his release yet). Plus I've always had a suspicion that Benhime has power negating abilitys

Part one: Not sure. It's Aizen's Coup de Grace, and someone as brain as him can't and won't be tricked to reveal such so quickly and easily.
Part two: Aizen. Power-wise, Aizen's tougher. Aizen outsmarted Urahara quite a number of times, thus showing Aizen's mental cunning over Urahara.

2. Aizen. Shinji doesn't even know what to do. He's trying to prevent a one-hit death. It seems that Gin is more on par with the stronger characters. Maybe Urahara vs. Gin.

1. Yes. Urahara is cunning enough and more than strong enough to force Aizen to play this hand. I doubt it'd be much of trick for him to do it and more the fact that since Urahara has seen Aizen's release (which can be inferred from the TBTP Arc where it seems everyone in said Arc was exposed to it, plus Aizen seemed to have a habit of showing everyone his Shikai like a flasher in a mall parking lot) and has had over 100 years to dissect and study it. Given that time, I'm sure that Urahara has figured it out by now.
2. The jury's still out. It's quite clear that Ichigo is going to be the one to defeat Aizen, this week's chapter all but insured it. I, personally (as both a Urahara fan and a believer in devine justice) would love for it to be Urahara that puts Aizen down; but I doubt it'll come down to that. We haven't seen either's Bankai, and we probably haven't seen the full effect of either's Shikai, so we can't fairly assess them.

Ezell... The bankais and shikais in bleach are absolute... If you fall in it.. it is over..
You can to fight a shikai or bankai.. but cant to deny it.. Urahara cant deny the power Aizen` .. in the case of Aizen.. his power is so effective that it is not possible to do any againt him..
It is just what Unohana has said..
